Did you know that today, March 14, is Pi Day? Yes, today is the day we celebrate the symbol for the ratio of the circumference of a circle to its diameter. And so I thought, why not commemorate this special day with a very special pizza pi?
While on a recent girl’s trip to Florida, my friends and I ate a local restaurant where we ordered a buffalo chicken pizza. It was so delicious, I had to take down the ingredients and try it at home. To my disbelief, it turned out awesome and better yet, the whole family loved it! I thought I would share it with you. Since I kind of made it up as I went along, I don’t have the specifics on the quantity of ingredients. Suffice it to say you can top the pizza with as much or as little of the toppings you like.
Buffalo Chicken Pizza
1 Pizza Crust (pre-made or homemade)
Buffalo Sauce (with as much heat as you can stand – I used Buffalo Wild Wings Medium)
Crumbled Blue Cheese
Finely Chopped Green Onion
Cooked Chicken Breast Pieces ( I cut mine into bite sized pieces)
Preheat oven to 450 degrees.
Prepare the pizza crust according to directions. I used Jiffy pizza crust.
Spread the crust on a greased cookie sheet. The thinner the crust for this pizza the better.
To make for a crispier crust, pre-bake the crust for 2-3 minutes in the oven at 450 degrees.
Spread buffalo sauce on the pizza.
Spread blue cheese crumbs. Remember a little goes a long way with blue cheese. I spread it very thinly and you could definitely taste it!
Top pizza with mozzarella cheese, chopped green onion and chicken breast pieces.

Bake at 450 degrees for 17-20 minutes or until cheese is melted and slightly golden.
